Recipe For Fried Pies and Fritters

This is a family favorite Cooking Recipe For Fried Pies and Fritters. Using the Multipurpose Baking Mix and adding simple variations and fillings gives you the traditional homemade taste and texture with a fraction of the store bought expense.

Multipurpose Baking Mix

9 cups of flour
1/3 cup baking powder
1 cup + 2 tbsp dry powdered milk
4 tsp salt
1 ¾ cups of shortening

Recipe For Fried Pies: Blend 2 cups of multipurpose baking mix (see above) with 1/2 cup water and stir 20-25 times. Turn onto lightly floured surface and knead 15 times. Roll to pasty thickness and cut into 5-inch circles. Place 2 tbsp of desired filling (see below) on 1/2 of circle, keep from outer edge of circle. Dampen outer edge of circle, fold over and seal edges by pressing firmly with fingers or fork tines. Fry in deep hot fat (350 degrees) for 3 minutes, turning once.  May be baked on cookie sheet at 400 degrees until light brown (prick top before baking).  Makes 6 pies.

Fried Pie Filling Variations:

  • Canned or Cooked Fruit Fried Pie Filling: 2 tbsp thickened and sweetened
  • Applesauce Fried Pie Filling: 2 tbsp thick and sweetened
  • Dried Apricot Fried Pie Filling: 1/2 cup dried apricots that have been cooked, drained and mashed plus 3 tbsp sugar
  • Pineapple Fried Pie Filling: mix 4 tsp sugar and 2 tsp cornstarch and cook until thick. Cool and add 2/3 cup drained, crushed pineapple
  • Chicken Fried Pie Filling: mix well 1 cup minced chicken, 1 tbsp chopped pimiento or parsley and 1/4 cup undiluted cream of mushroom soup or thick bbq sauce
  • Chili Fried Pie Filling: thick canned or homemade chili. Make sure you refrigerate any leftover pies.
  • Creamed Tuna Fried Pie Filling: mix well 1 can (6oz) tuna, drained, 1/3 cup thick white sauce or undiluted cream of mushroom soup and 1 tsp grated onion.

Recipe for Fried Fritters: add 2 cups multipurpose baking mix (see above), 2/3 cup milk or water, 1 egg, slightly beaten and mix until well blended. Stir into batter desired fruit or vegetable variation (see below). Drop by rounded teaspoonfuls into deep hot fat ( 360-375 degrees). Fry until golden brown on each side. Drain on paper towel. Makes about 2 dozen.

Fried Fritter Variations:

  • 2 cups of  favorite fruit: cut up bite size or smaller – serve with hot syrup, powdered sugar or jam
  • 2 cups of cooked favorite cooked vegetables: cut up bite size or smaller – serve with bacon or ranch dip
