Recipe For Up-Side Down Cake

A warm homemade dessert always compliments a great home cooked dinner. This Basic Cooking Recipe For Up-Side Down Cake will give you just that, the perfect dessert. It uses the basic baking mix along with you favorite fruit. You can bake this one right on the stove-top if you want. My family also prepares this Recipe in the dutchoven. Serve warm with ice-cream or whipped cream.

I also included our favorite family griddle cake and waffle recipe (pancakes). You can create those nice fluffy pancakes or crispy delicious waffles in not time. Simply follow the recipe below, add your favorite topping and that weekend brunch will be a hit any day of the week.

Basic Multipurpose Baking Mix

9 cups of flour
1/3 cup baking powder
1 cup + 2 tbsp dry powdered milk
4 tsp salt
1 ¾ cups of shortening

Recipe For Cake: Mix 1 1/2 cups basic baking mix (see above) with 1/2 cup sugar. In separate bowl mix 1 egg, 1/2 cup water and 1/2 tsp vanilla. Add 1/2 liquid mixture to dry mixture; beat for 2 minutes on medium speed or by hand vigorously. Add remaining liquid and beat 1 minute on low speed. Pour into 9-inch layer cake pan that has been greased/floured. Bake at 375 degrees for about 25 minutes. Make 1 cake 9-inch layer cake or 12 cupcakes.

Cake Variations:

  • Pineapple Up-Side Down Cake: Melt 1/4 cup butter or margarine in a 9-inch heavy   skillet or layer cake pan. sprinkle 1/2 cup firmly packed brown sugar on butter. Pour 1 1/2 cups of  pineapple over sugar and butter.  Prepare the Basic Cake Mix Recipe (above) and spread over pineapple mixture. Bake at 350 degrees for 30 minutes or cook over low heat with lid on pan. Once cooked turn upside down on platter. Top with ice-cream or whipping cream. ( Note: If fruit juice is clear or light colored, you can use all or part in place of water in batter)
  • Fruit Up-Side Down Cake: follow recipe above for Pineapple Up-Side Down Cake but replace the pineapple with your favorite fruit such as peaches, cherries or apricots.
  • Banana Up-Side Down Cake: follow recipe for Pineapple Up-Side Down Cake but reduce water to 1/3 cup and add 1/2 to 2/3 cup mashed bananas and 1 tsp nutmeg.

Recipe For Griddle Cake and Waffles: Mix 2 cups multipurpose baking mix (see above) and 1 tsp sugar, add 2 cup s water to dry mix and stir about 25 times (not smooth). Bake on preheated griddle or waffle iron. For pancakes turn when bubbles appear on surface. Makes 16 cakes (4-inch) or 4 small waffles. Top with butter and warm syrup.
